Meat Yield Overview

Here’s what to expect from your beef purchase:

Live Weight: The weight of the animal before processing. A typical steer weighs around 1,200 lbs.
Carcass Weight: Approximately 59–63% of the live weight. For a 1,200 lb steer, this equates to a hanging weight of ~750 lbs.
Finished Weight: Around 61–65% of the hanging weight becomes finished meats, yielding ~490 lbs of bone-in cuts from a 1,200 lb steer.
